Best No-Bake Scotcheroos Recipe

Scotcheroos – a classic no-bake treat that’s easy to make and always a crowd-pleaser! Here’s a simple and delicious recipe for no-bake Scotcheroos:

2 cups of Rice Krispies cereal

1 cup of peanut butter (creamy or crunchy, whichever you prefer)

 1 cup of confectioners’ sugar

1/2 cup of chocolate chips (semi-sweet or milk chocolate)

 1/2 cup of butterscotch chips

 1 tablespoon of honey

 1 teaspoon of vanilla extract

Optional: chopped nuts or sprinkles for added fun!

1. In a large pot or saucepan, combine the peanut butter, confectioners’ sugar, and honey. Place the pot over low heat and stir until the sugar has dissolved and the mixture is smooth.

2. Remove the pot from the heat and stir in the vanilla extract.

3. Add the Rice Krispies cereal to the pot and stir until the cereal is evenly coated with the peanut butter mixture.

4. Press the mixture into a greased 9×13-inch baking dish. You can use a spatula or your hands to press the mixture down firmly and evenly.

5. Melt the chocolate chips and butterscotch chips in a microwave-safe bowl in 30-second increments, stirring between each interval, until smooth.

6. Pour the melted chocolate and butterscotch mixture over the Rice Krispies layer in the baking dish.

7. Refrigerate the Scotcheroos for at least 30 minutes or until the chocolate is set.

8. Cut into bars and serve. You can also add chopped nuts or sprinkles on top of the Scotcheroos before refrigerating them for an extra touch of fun.

Tips and Variations:

To make the Scotcheroos more festive, use colored sprinkles or chopped nuts to match a specific theme or holiday.

If you prefer a gooier Scotcheroo, you can add an extra tablespoon or two of honey to the peanut butter mixture.

Experiment with different types of cereal, like Froot Loops or Cocoa Puffs, for a unique twist on the classic recipe.

Consider using almond butter or cashew butter instead of peanut butter for a different flavor profile.

Enjoy your delicious no-bake Scotcheroos!
