Ingredients:

 1 pound of pasta (Emily uses penne, but feel free to experiment)

 4 tablespoons olive oil

 4 cloves garlic, minced

 1/2 teaspoon red pepper flakes (optional)

 1 cup heavy cream

 1/2 cup grated Parmesan cheese

 Salt and pepper to taste

Instructions:

1. Bring a large pot of salted water to a boil.

2. Add the pasta and cook for 2 minutes less than the package directions.

3. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the garlic and red pepper flakes (if using) and cook until fragrant.

4. Pour the heavy cream into the skillet and bring to a simmer.

5. Add the cooked pasta and its starchy cooking water to the skillet. Stir to combine.

6. Stir in the Parmesan cheese and season with salt and pepper.

7. Serve immediately, topped with extra Parmesan cheese and a drizzle of olive oil if desired.
