Fast Fish Tacos

– 8 small corn or flour tortillas

Instructions:

1. Prepare the fish: Start by preheating your oven to 375°F (190°C), or if you prefer, you can grill the fish. Pat the fish fillets dry with paper towels.

2. Season the fish: In a small bowl, combine the chili powder, cumin, garlic powder, onion powder, paprika, salt, and pepper. Rub this spice mixture onto both sides of the fish fillets.

3. Cook the fish: Heat olive oil in an oven-safe skillet over medium-high heat. Once hot, add the seasoned fish fillets to the skillet. Cook for about 3 minutes on each side until lightly browned. Transfer the skillet to the preheated oven and bake for another 5-7 minutes, or until the fish flakes easily with a fork.

4. Warm the tortillas: While the fish is cooking, warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side or until they are soft and pliable. You can also warm them directly over a gas flame for a few seconds if you prefer a slightly charred taste.

5. Assemble the tacos: Once the fish is done cooking, use a fork to break it into bite-sized pieces. Place some of the fish pieces onto each tortilla.

6. Add your toppings: Top your tacos with shredded cabbage or lettuce, diced tomatoes, sliced avocado or guacamole, chopped cilantro, and any other toppings you like.

7. Serve: Serve your tacos with lime wedges and let everyone add sour cream, Greek yogurt, salsa or hot sauce as desired.
